2487VSS - Hella-Bock Yeast Out of the depths of the archive, this lager srain is ideal for that huge, chewy bock that you are looking to brew during the winter months. Produces rich, full bodied, malty beers. Complex flavor profile with great mouth feel. Attenuates well while still leaving plenty of malt character and body. Benifits from a temperature rise for diacetal rest at the end of primary fermentation. Alcohol tolerance approximatley 9% ABV, Attenuation 70-74%, Floculation: Medium, Temp Range 48-56%
3191VSS - Berliner-Weisse Blend Yeast Includes a German Ale strain with low ester formation and a dry, crisp finish. The Lactobacillus included produces moderate levels of acidity, and a uniwue Brettanomyces strain imparts a critical earthy characteristic that is indicative of a true Berliner Weisse. Generally Requires 3-6 months of aging to fully develop flavor characteristics. Alcohol tolerance approximatley 10% ABV, Attenuation 75-77%, Floculation: low, Temp Range 55-68%
2105VSS - Rocky Mountain Lager Perfect for that "Banquet Style" beer, this lager strain, born high in the Colorado Rockys ferments well at colder temperatures with an emphasis on the malt finish. Will work well for all North American lagers, light pilsners and adjunct beers. Mild malty profile, Medium ester profile, well balanced. Alcohol tolerance approximatley 9% ABV, Attenuation 70-74%, Floculation: medium-high, Temp Range 48-56%
